What You’ll Need

·      (2) 4oz. Chocolate Bars (60% cacao or more is best)

·      1 cup Heavy Cream

·      ½ tsp. vanilla extract

·      Assorted toppings: powdered sugar, sprinkles, chopped nuts, etc.

How to Make the Truffles

1.     Break up the chocolate into smaller pieces and place in a heat proof bowl.

a.     Make sure the mixture is spread evenly, covering the entire dish.

b.     Optional: you can cover it with plastic wrap, but make sure it’s touching the surface of the chocolate so no condensation drips onto the mixture.

5.     Using a cookie scoop (or 1 tbsp), spoon out round balls from the pan and place onto a parchment-lined baking sheet.

a.     The size of your truffles is up to you, but we’ve found that a cookie scoop produced the most classic size.

6.     Roll the balls into whichever toppings you'd like!

Tips From Madam Silk:

·      Once your truffle mixture has set in the fridge and you’re scooping out the balls, you may find you need to place them back into the fridge to reset a little before rolling in your chosen toppings!

This is especially true after you’ve shaped them into more rounded balls using your hands; the heat from hands can cause the chocolate to soften.

·      If you want to make the “spider web” icing for a Halloween-themed truffle, just whisk together: 1 cup powdered sugar, ½ tsp vanilla extract, and 1 Tbsp. milk. If you want it to be thicker, just keep adding powdered sugar until you get your desired consistency.

·      Store your truffles in an airtight container in the fridge until you’re ready to serve!
